Red Fife is a heritage wheat and Canada's oldest wheat, first grown by David Fife on his Ontario farm in 1842. By the 1860's Red Fife, as it came to be known, was grown through much of Canada and remained the preeminent wheat until about 1900. It was prized for its flavour and superb milling quality.
Red Fife is high in protein, fibre, magnesium, Vitamin B, and a host of other valuable nutrients, particularly when freshly milled. Full of flavour, Red Fife makes an excellent high-protein, hard red spring wheat bread flour that encourages nice rise and an exceptional caramel crust. Fabulous for sourdough bread, pizza crust, and muffins but also great in quick breads and in a range of baked goods.
