Spelt's lightly nutty, sweet flavour and its delicate colour make it a great choice for treats such as cakes, pie, cookies, muffins, and crusts as well as for quick breads or brownies. Wonderful for biscotti and amazing in your typical chocolate chip cookie recipe. Get a softer texture by milling very finely or milling the flour a second time. Any recipe that adds yogurt or buttermilk softens texture even further and beautifully compliments Spelt's natural flavour.
